11 West Bay Road (Highway C724)
Holm Oak Vineyards was established in 1983, and takes its name from the Holm Oak trees planted on the property. The vineyard is 12 Ha in size and has plantings of Riesling, Sauvignon blanc, Chardonnay, Pinot Gris, Arneis, Pinot Noir, Merlot, Cabernet Franc and Cabernet Sauvignon.
We are fortunate enough in Tasmania to be able to produce fruit that is packed with flavour and has wonderful natural acidity. To me, the acidity is an important attribute in our wines as it gives lightness and balance and I try to build texture and flavour around this wonderful natural asset. We are also increasingly taking a minimalist approach to our winemaking and continue to increase the percentage of natural fermentation that we do and decrease the amount of additives and finings to our wines.
This wine is a blend of 2010 and 2011 base wines and is made from 60% Pinot Noir and 40% Chardonnay. For these base wines we simply picked the fruit at optimum acid levels, whole bunch pressed the fruit and fermented the racked juice with a nuetral yeast strain to retain freshness. The wine then underwent malolactic fermentation to soften teh acidity and add complexity. The two base wines were then blended and tiraged. The wine stayed on lees for a period of 12 months prior to disgorging. A small addition of Pinot Noir was made at the time of disgorging to give a lovely rose colour
This Sparkling has delightful lifted strawberry aromas on the nose, with some yeasty compexity. The palate shows delicious fresh citrus characters with some hints of strawberry and is fresh and vibrant with refreshing acidity and a dry finish.
